The concept was always to keep the cheese and protect it from insects and possible predators.
The cheese was placed in a vat of wood and stacked layer by layer, with the leaves above or drowned in the dregs. The cheese took the aroma of the leaves or the dregs with which it came into contact and took a delicate and palatabletaste.
